Naturally occurring antioxidants in foods help to protect the tissues and cells against excessive oxidation. Proanthocyanadins found in the skin of blueberries and black cherries, and in the pulp of blackberries, are potent antioxidants. Flavonoids are responsible for the deep reddish-blue colour of most berries.
