Ingredients
For the Cherry Jam
- 200g cherries
- 2 x tbsp maple syrup
For the Porridge
- 100g oats
- 300ml milk, or milk alternative
- 1 x tsp Lion’s Mane mushroom powder
- Pinch of salt
- 1 x tbsp honey
To serve
- 1 x tbsp seed butter
- 1 x tbsp maple syrup
Method
For the Cherry Jam
- In a small saucepan, combine the cherries and maple syrup.
- Simmer on low heat for approximately ten minutes until the cherries are well-cooked, transforming into a jam-like consistency.
For the Porridge
- In a separate saucepan, set the heat to medium.
- Introduce the oats and lightly toast them for about one minute.
- Pour in the milk. Switch to low heat and cook for ten minutes, stirring frequently. The goal is to achieve a thick consistency. If you prefer a more fluid texture, you can add a bit more milk or water.
- Once you achieve your desired porridge consistency, turn off the heat and stir in the Lion’s Mane mushroom powder, salt and honey.
To serve
- Dish out the warm porridge equally into two bowls.
- Garnish with a generous spoonful of the cherry jam, seed butter and a drizzle of maple syrup.
