- 1 pack Clearspring Organic Tofu
- 1 x tbsp coconut oil
- 2 x tsp Clearspring Organic Double-Strength Tamari Soya Sauce
- 1 x tsp turmeric powder
- 1 x tsp cumin powder
- 1 x tsp fresh lemon or lime juice
- Pinch of salt and black pepper
- Handful of fresh spinach
- 1 garlic clove
- Handful of fresh coriander
- 2 slices of fresh wholegrain bread or toast
Optional toppings and garnish:
- Pinch of chilli flakes or powder
- Cherry tomatoes
- Alfalfa sprouts
- Heat the coconut oil in a frying pan over medium heat. Add the chopped garlic, cumin and turmeric powder and let it heat up. Once the spices are warm, add the spinach and let it wilt in the pan with the lid on.
- Open the Clearspring Tofu, remove the liquid and crumble the tofu into the pan with your hands. Let that cook until you see the tofu wobbling in the pan. Add a pinch of sea salt, a drizzle of Tamari Soya Sauce and a squeeze of fresh lime juice.
- Spread the coconut oil on toast or fresh bread. Scoop a generous amount of the scrambled tofu and place it on top of the bread or toast.
- For garnish, sprinkle some chilli flakes, black pepper and fresh coriander. If you want a bit more acidity, squeeze a little more lime.
- Add some sprouts and cherry tomatoes on the side and serve.
- Enjoy warm.
