Ingredients
- 30g chia seeds
- 30ml honey or maple syrup
- 1/2 tsp ground cinnamon plus more for dusting
- 240ml coconut milk
- 10g cacao powder
- 240ml vanilla coconut yoghurt
- 15g cacao nibs
Method
- Combine the chia seeds, honey or maple syrup, cinnamon and coconut milk in a container
- Stir thoroughly to ensure everything is well mixed.
- Cover and refrigerate for at least one hour (overnight is ideal for the best consistency)
- In a separate container, blend the cacao powder with the yoghurt until smooth
- In serving jars, layer the chia pudding and cacao-infused yoghurt alternately.
- Finish with a sprinkle of cinnamon and a generous scattering of cacao nibs for that extra crunch and flavour (switch cacao nibs for fresh blueberries if you prefer a fruity twist!)
