Strawberry and Acerola Overnight Oats

Overnight oats are the perfect healthy, nutritious breakfast, especially if you tend to find yourself short of time in the morning as all the hard work gets done the night before. The beauty of overnight oats is that they can be as quick and simple or as creative as you like!

Acerola is a small, sweet and sour Brazilian cherry with high vitamin C content in a form easily absorbed by the body.
Acerola cherries are also high in vitamin A and iron, with trace levels of B vitamins, magnesium, potassium, copper and zinc, which all help with overall health and wellbeing. Acerola powder has a sweet and tangy flavour, great for blending into drinks, smoothies, juices and overnight oats.
Chia seeds are a versatile ingredient, easily blended into many recipes. They are incredibly nutrient-rich, packed with fibre, protein and omega-3 fatty acids.
Ingredients
- 40g porridge oats
- 1 teaspoon of acerola cherry powder
- 1 tablespoon of chia seeds
- ½ teaspoon ginger powder
- 2 teaspoon coconut syrup
- 150ml plant-based milk
- 50g berries and cherries
- Optional: Flaked almonds
Method
- Mix the oats with the cherry powder, chia seeds and ginger.
- Add the coconut syrup and plant-based milk and mix well.
- Pour into a sealable jar or cup and refrigerate overnight.
- Top with fresh berries, cherries and flaked almonds in the morning and enjoy.
